CALAMARI IN BLACK BEAN SAUCE.

CUMI-CUMI DENGAN SAUS KACANG HITAM 
  CALAMARI IN BLACK BEAN SAUCE.

        INGREDIENTS                                            UNITS.
·         Squid                                                       : 25 lbs   ( diced)
·         black bean sauce                                    : 2ea       ( dry)
·         garlic fresh                                              : 6 oz     ( chopped)
·         ginger fresh                                             : 6 oz     ( chopped)
·         onion red                                                 :  5 lbs   ( diamond)
·         snow peas                                                :  5 lbs
·         carrots                                                     :  5 lbs   ( sliced)
·         bamboo shoot                                         : 2 cn
·         leeks  (white only)                                   :  2 lbs   (diamond)
·         green onion                                              :  6 bu   ( 2 inch strips)
·         chicken stock                                           :  2 qt
·         chicken base minor                                 :  4 oz
·         cornstarch                                                : 4ea
·         soy sauce                                                  : 3 oz
·         vinger white                                             : 2 oz
·         salt &pepper                                            : to taste
·         oil veg                                                       : 6 oz
·         egg fresh                                                   : 8 ea
·         cilantro                                                     :  4 bu


PROCEDURE
1.      season squid and seal it on flat top as required and keep aside
2.      saute ginger garlic, add bean sauce ,stock ,base minor soy sauce and simmer .
3.      adjust the seasoning .thicken with cornstarch.
4.      toss  some vegetable in wok add some sealed squid and sauce to it .
     finish with green onion .garnish with chopped cilantro
