HIJIKI & BONITO FRIED RICE
INGREDIENTS
Rice Chinese : 10 lbs (Steamed)
Onion yellow : 2 lbs (julienne)
Bonito flakes : ½ lb
Hijiki Seaweed : ¼ pkt (Soaked in hot water)
Garlic fresh : 6 oz
Carrots : 2 lbs (julienne)
Green peas : 5 lbs
Chinese cabbage : 1 ea (Julienne)
Beans sprout : 2 lb
Spring Onions : 2 bunches (Rings)
Egg fresh (omelet) : 2 doz (julienne)
Tamari Soy sauce : 1 ea (bottle)
Mirin : 6 oz
Tomato ketchup : 3 ea (bottle)
Oil vegetable : 4 oz
Hijiki Seaweed (Juliennes) : Garnish
Snow Peas : 1 Lb
PROCEDURE
· Sauté onion, garlic and carrots. Add cooked rice and sauté.
· Mix ketchup, mirin, soy sauce and green peas.
· Finish with omelet, bonito flakes, Hijiki and bean sprouts.
· Garnish with Chinese cabbage, spring onions, snow peas juliennes and omelets cut into juliennes.
