LEMON GINGER CHICKEN.
INGREDIENTS UNITS.
· Chicken thigh boneless : 30 lbs ( julienned)
· Egg’s fresh : 12 ea
· Cornstarch : 4 ea
· Ginger sliced. : 10 oz ( julienne)
· Chicken stock : 3 qt
· Chicken base minor : 6 oz
· Onion yellow : 5 lbs ( diced)
· Carrots : 5 lbs ( diced)
· Vanilla pudding : 10oz
· Peppers red : 5 lbs ( diced)
· Green onion : 4 bu ( roundels)
· Tomatoes fresh : 5 lbs ( cubes)
· Pineapple’s fresh : 5 ea ( cubes)
· Lemonade. :1 cup.
· Orange constrade. : 1 cup ( fresh)
· Oil veg : .10 qt
· Salt & pepper white : to taste
PROCEDURE.
1. dip chicken in egg , cornstarch mix and deep fry and keep aside
2. saute ginger in oil add chicken stock and base minor and simmer for 10 min
3. adjust the seasoning and thicken with cornstarch
4. add the lemon juice
5. in wok toss some veg and the fried chicken add some sauce and finish with green onion’s and cubes of tomatoes .
